Method
Grate the ginger on a fine microplane and mince the garlic through a press.
Combine the ginger and garlic with sesame oil. Warm the mixture gently over low heat just until fragrant—don't let it color. Cool completely and strain.
Cut the red fish into small, neat cubes and mince the onion as fine as you can.
Squeeze the lime juice and whisk it together with soy sauce and the infused sesame oil.
Toss the fish with the onion, pour the dressing over it, and fold everything together gently.
Chill the tartare in the fridge for 10–15 minutes before service.
