Method

Sort and wash the red currants.

Place the berries in a saucepan and add the water.

Set the pan over heat, bring to a boil, and remove immediately.

Blend the berries with an immersion blender (or mash them with a potato masher).

Strain the blended berries through a fine-mesh sieve.

Weigh the juice and add an equal amount of sugar—a strict 1:1 ratio!

Return the saucepan with the juice and sugar to the stove, bring to a boil, and simmer for about 10–12 minutes.

Ladle the jelly into sterilized jars, seal with lids, and store in a cool place.
