Method
Rinse and dry your currants, then transfer them to a heavy-bottomed pot and toss with sugar. Let it sit for a bit to release the juices. Place the pot over medium heat and stir constantly, bringing the mixture to a gentle boil until the sugar crystals dissolve completely.
Continue cooking until the mixture noticeably thickens, then stir in the pectin and keep cooking for another 3–5 minutes, stirring constantly. Pass the finished jam through a fine-mesh sieve, pressing the fruit pulp through with a spatula to remove the seeds and skins, leaving you with a smooth, uniform texture.
Pour the hot jam into sterilized jars and cap them immediately. Cover with a clean kitchen towel and let cool to room temperature, then store in a cool, dark place to finish setting.
