Method

Rinse the pearl barley, cover with cold water, and soak for 3–4 hours. Then cook until half-tender and drain in a colander.

Blanch the tomatoes, peel off the skin, and cut into cubes.

Finely chop the onion and grate the carrot on a coarse grater.

Heat the oil in a pot, add the tomatoes and onion, stir in the carrot, and simmer for 10 minutes.

Thinly slice the cabbage into julienne, cut the cucumbers into cubes, add to the pot along with salt, sugar, and pepper, and simmer for 20 minutes, stirring occasionally.

Stir in the pearl barley, pour in the vinegar, mix well, and simmer for another 10 minutes.

Ladle the hot mixture into sterilized jars, seal tightly, flip them upside down, and let cool completely before storing in a cool pantry.
