Method

Rinse the pearl barley, cover with cold water and soak for 3–4 hours, then cook until half-done and drain in a colander.

Pour boiling water over the tomatoes, peel off the skin and cut into cubes.

Finely chop the onion and grate the carrot on a box grater.

Heat the oil in a pot, add the tomatoes and onion, stir in the carrot and simmer for 10 minutes.

Shred the cabbage into thin strips, cut the cucumbers into cubes, add to the pot along with salt, sugar and pepper, then simmer for 20 minutes, stirring occasionally.

Stir in the pearl barley, pour in the vinegar, mix well and simmer for another 10 minutes.

Spoon the hot mixture into sterilized jars, seal, turn upside down and leave to cool completely, then store in a cool pantry.
