Method

Wash the quinces thoroughly, remove the fuzzy skin, cut into pieces, and immediately place the flesh in water with lemon juice to prevent browning.

Dice the quince into small cubes, transfer to a pot, add sugar, and pour in water.

Bring to a boil and simmer for 10–15 minutes, then cool completely for 3–4 hours.

Reheat, stir in the gelling agent, and cook for 3–5 minutes until it reaches the desired thickness.

Pour the hot jam into sterilized jars, seal with lids, flip them over to check the seal, then turn them right-side up to cool.

Store in a cool place.
