Method

Wash the quinces thoroughly, rub off the fuzzy coating, cut into chunks, and immediately place the flesh into water with lemon juice to prevent discoloration.

Cut the quince into small dice, transfer to a pot, add sugar, and pour in water.

Bring to a boil and simmer for 10–15 minutes, then cool completely for 3–4 hours.

Reheat, stir in the Gelling Sugar, and cook for 3–5 minutes until it reaches the right consistency.

Transfer the hot jam into sterilized jars, seal with lids, flip them upside down briefly to check the seal, then leave to cool in the normal upright position.

Store in a cool place.
