Method

Boil the peeled potatoes in lightly salted water until tender.

Mash the potatoes with a masher, add a pinch of salt, a chicken egg, a small pat of butter, and the sifted flour. Knead thoroughly into a smooth, thick dough.

Divide the finished potato dough into small portions and roll them into balls slightly larger than a walnut.

Shape the dough by hand, cut into equal pieces, and form small patties. Cook in salted water for 5 minutes after they come to a boil.

Meanwhile, prepare the aromatic topping: finely chop the onion and sauté in a mixture of butter and vegetable oil until golden brown.

Serve the vareniki hot, drizzled with the hot onion and oil mixture. Optionally, garnish the dish with fresh homemade sour cream.
