Quick-Pickled Cucumber and Onion Salad for Winter

Method

Slice the cucumbers into rounds or half-moons. Cut the onion into thin rings or half-rings. Mince the garlic.

Combine everything in a pot. Add the salt, sugar, vinegar, and vegetable oil. Toss well and let it sit for 3.5 hours, stirring occasionally.

Place the pot over medium heat. Once boiling, simmer for 10–15 minutes.

Pack the hot salad into prepared jars, making sure to submerge them well in the juices, and seal tightly right away.

Turn the jars upside down, wrap them in a blanket, and let them cool completely.
