Method

Cut the head of cabbage into quarters, then crosswise into 3-4 cm (about 1.5-inch) thick pieces.

Place julienned beets, garlic, and peppercorns at the bottom of the jar.

Pack the cabbage tightly into the jar without crushing it too much, finishing with a layer of beets on top for even color.

To make the brine, bring water to a boil, then dissolve the salt and sugar, and stir in the vinegar.

Pour the hot brine over the contents of the jar.

Cover the jar with a small plate or cloth and leave it at room temperature for 1 day, then transfer to the refrigerator.
