Method
Place the mayonnaise in a large bowl. Add the salt, baking soda, and sugar, then pour in the boiling water. Stir quickly.
Gradually add the sifted flour and knead into a soft, pliable dough—first with a spoon, and then by hand once it cools down a bit. Cover the kneaded dough with a towel and let rest for 30 minutes.
Divide the dough into 12 portions and shape each piece into a ball. Cover the dough with plastic wrap and let rest for another 10 minutes.
Roll each piece of dough into a 2-3 mm thick round. Cook in a preheated skillet with a small amount of vegetable oil. Fry over medium heat until golden brown on both sides.
Transfer the cooked flatbreads to paper towels and serve immediately.
