Quick Meat Hand Pies
Fragrant homemade hand pies made with a tender, yeast-free sour cream dough and a juicy meat filling. They turn out golden brown, with a thin crust and plenty of filling.

Method
Sift the flour into a bowl and add the cold butter. Chop together with a knife or pastry scraper until fine crumbs form.
Add the sour cream, egg, and salt. Knead into a soft dough, first with a spoon and then with your hands.
Wrap the dough in plastic wrap or a plastic bag and chill in the refrigerator for 30-40 minutes.
Add the finely diced onion, salt, and pepper to taste to the minced meat. Pour in 100 ml of cold water and mix thoroughly.
Transfer the dough to a floured work surface and divide it into 12 portions. Roll each piece of dough into a ball and cover with plastic wrap or a bag to prevent the dough from drying out.
Roll out a dough ball, place the filling in the center, and pinch the edges together to form a hand pie.
Place the pies on a baking sheet lined with parchment paper. Beat the egg in a bowl and brush the tops of the pies with the egg using a pastry brush.
Bake the pies in a preheated oven at 180°C (350°F) for 35-40 minutes.
