Quick Hummus
A silky and fragrant dip made from chickpeas or beans with tahini paste and olive oil. Pairs wonderfully with rice, flatbreads, or chapati.

Method
Cook the chickpeas or beans (after soaking them beforehand for 4-6 hours; beans are best soaked for a day, changing the water every 12 hours), adding a bit of salt. Simmer over low heat until tender, keeping an eye on the liquid level and adding more if needed.
Grind the cumin seeds in a mortar, or you can use pre-ground powder.
Once the chickpeas or beans are cooked, transfer them to a blender cup along with a little of their cooking liquid.
Add the tahini, cumin, olive oil, and freshly squeezed lemon juice, then blend everything together. If the consistency is too thick, add more cooking liquid.
