Method

Pour the room-temperature kefir into a bowl, add the salt, sugar, and vegetable oil, and whisk until smooth.

Sift the flour and baking powder in gradually, kneading until you have a smooth, elastic dough that doesn't stick to your hands.

Shape the dough into a ball, place it in a bag, and let it rest for 20 to 30 minutes.

Dice the ham and cheese finely and mix them together thoroughly for the filling.

On a floured work surface, roll the dough into a log, cut it into 12 equal pieces, and shape them into balls.

Roll out each ball into a circle, place about 1 tablespoon of filling in the center, and pinch the edges together to seal the hand pies.

Brush the pies with an egg wash made from the egg yolk and milk.

Bake in the oven at 170°C (340°F) for about 25 minutes.
