Method

Pour water into a pot, add onion skins, tea, salt, sugar, and peppercorns.

Bring to a boil, simmer for 5–7 minutes, then let cool completely.

Clean the mackerel — remove the head, tail, and innards, then rinse thoroughly.

Take a plastic bottle, cut off the neck, place the fish inside, and cover with the cooled brine.

Cover with a plastic bag and refrigerate for 3 days.

Flip the bottle occasionally to ensure even curing.
