Method
First, combine the butter, sour cream, and vanilla sugar.
Mix half of the flour with the baking powder and stir it into the mixture. Begin kneading the dough, gradually adding the remaining flour (you may need a bit more or less). The end result should be a soft dough that doesn't stick to your hands.
For the filling, coarsely grate the apples, add lemon juice, sugar, and optional lemon zest (or cinnamon, raisins, etc.).
Roll the dough into a 15x30 cm rectangle, spread the filling down the center (drain the apples thoroughly through a sieve first), and fold one edge over, followed by the second edge overlapping it. Cut into 4-5 cm wide pieces.
Brush with beaten egg (optional) and bake in a preheated oven at 200°C (400°F) for 25-35 minutes until golden brown.
Dust the finished pastries with powdered sugar if desired.
