Method
Pop the feta in the freezer for 10 minutes so it cuts cleanly.
Break the baguette into bite-sized pieces.
Crush the garlic with the flat of your knife, put it in a cold pan, cover with oil, and heat until it's golden and fragrant.
Remove the garlic, dip the bread pieces in the oil, spread them on a baking sheet, and toast in a preheated 350°F oven for 10-12 minutes.
Zest the orange and squeeze out the juice.
Whisk together the juice, zest, mustard, oil, salt, and pepper.
Arrange the salad greens on plates, place the quail eggs and bread croutons around them, dress with the vinaigrette, and top with crumbled feta.
