Method

Cut the pumpkin into segments, peel away the skin and seeds, chop into small pieces, transfer to a pot, and cover with water.

Simmer over medium heat until the pumpkin is completely tender, drain off excess water, then blend the soft pumpkin with an immersion blender until you get a smooth, uniform puree.

Stir in the lemon juice and condensed milk, mix thoroughly, then simmer the mixture over low heat for 5–6 minutes with the lid on—it'll start to splatter as it heats.

While still hot, transfer the puree to sterilized jars, seal them, flip upside down, and wrap them up to cool completely, then store in a cool, dark place.
