Method

Dice the onion finely and sauté until tender. At the end, add the garlic, cook for about another minute, and let it cool completely.

Soak the white bread for the mixture in milk.

Pass the chicken breast and thigh through a meat grinder. Add the sautéed onion, the bread along with the milk, salt, and pepper. Mix the meat thoroughly until smooth.

Cut the white bread for the breading into small cubes.

Form cutlets weighing about 60 g or larger if desired, and roll them in the bread cubes, pressing the coating gently with your hands.

Fry the cutlets in vegetable oil over medium heat until golden brown on both sides. Then transfer them to a baking sheet and finish cooking in the oven at 170°C for 10 to 15 minutes.
