Method
Add sliced garlic and peppercorns to each jar.
Cut the meat into pieces small enough to fit through the jar opening.
Mix all your spices together with salt.
Coat each piece of meat thoroughly in the spice mixture and pack it into the jar, adding a bit more garlic and a bay leaf.
Cap the jars loosely—don't seal them tight yet.
Place the jars in a pot lined with a kitchen towel, pour water up to the rim of the jars, and simmer gently for 2 to 2.5 hours, topping up the water occasionally.
Remove the jars, seal the lids tightly, and let cool to room temperature, then refrigerate overnight.
