Dice the onion and bacon, sauté in a skillet for 3 to 4 minutes, then add the mushrooms and cook for another 5 minutes, pour in the heavy cream and bring to a simmer.

Slice the potatoes into thin rounds, season with salt and pepper to taste in a large bowl, toss with olive oil, and transfer to a baking dish.

Pour the cream mixture over the potatoes and bake in a preheated oven at 350°F (180°C) for 40 to 45 minutes, topping with grated cheese 10 minutes before done.
