Method

Wash the potatoes thoroughly and slice them lengthwise into long planks about 1 cm thick. Make cuts on both sides using skewers as guides—this transforms ordinary potato slices into an accordion pattern.

Brush with oil seasoned with paprika and ground pepper. Fry the potato accordion in hot oil until golden and crispy on both sides.

Transfer the cooked potato to paper towels and season with salt to drain excess oil. Layer your filling on top: fluffy omelet, crispy bacon, and hot melted cheese stacked together. Top with another potato accordion slice and serve.
