Method

Add the yeast and sugar to the warm milk.

Add the salt and the milk mixture to the flour, then knead into a dough.

Fold in the melted butter, knead well, and let rise in a warm spot for 1 hour.

Boil and mash the potatoes, then mix in the sautéed onions, fresh herbs, salt, pepper, and spices.

Divide the dough into portions, roll them out, place the filling in the center, and pinch the edges to seal.

For pan-frying: cook in oil until golden brown. For baking: let them proof for 20 minutes, brush with egg, and bake for 20 minutes at 180 °C (350 °F).
