Slice the potatoes into rounds about 4-5 millimeters thick.

Bring the heavy cream to a boil, season with salt, and add the potatoes. Simmer over low heat for 5 minutes, then remove from heat. Coarsely grate the cheese.

In a baking dish, layer the ingredients, adding more salt if needed: a layer of potatoes, a layer of cheese (save a handful of cheese to top it off later).

Make sure the very top layer is potatoes. Once all the layers are assembled, pour the remaining cream over everything. Cover the dish with foil and bake at 180°C (350°F) for 20 minutes.

After that, remove the foil, sprinkle the reserved cheese on top, and bake for another 10-15 minutes until golden.
