Method

Slice the potatoes thinly and arrange them in a baking dish.

In a saucepan, combine the milk, cream, garlic, and butter.

Add thyme, bay leaf, salt and pepper, then heat the mixture over medium heat.

Pour the cream mixture over the potatoes, cover first with parchment paper, then with foil.

Bake at 400°F for about 1.5 hours.

Remove the foil, sprinkle with grated cheese and return to the oven for a few more minutes until the cheese melts and browns.
