Method
Boil the potatoes in salted water, reserving some of the cooking water in a bowl.
Add the egg, sugar, yeast, and warm cooking liquid to the mash. Optionally, mix in chopped green onions and stir to combine.
Gradually sift in the flour and knead the dough. You might need slightly less flour—the main goal is to knead it until it stops sticking to your hands. Don't overdo the flour, or the dough will become tough.
Lightly oil the dough, place it in a bowl, cover, and let it rise in a warm spot for an hour.
Next, divide the dough into small balls, cover them, and let them rest for 5 minutes.
Pan-fry in vegetable oil over medium heat until golden brown on both sides.
