Mash your cooked potatoes into a smooth purée, then work in the flour, spices, finely chopped cilantro, and a glug of olive oil. Mix it into a soft dough—think playdough consistency—that doesn't stick to your hands. If it's too wet, dust in a bit more flour.

Divide the dough into small balls, stuff each one with grated sulguni cheese in the center, then gently flatten into a patty. Don't make them too thin or the cheese will escape while they're cooking.

Pan-fry the flatbreads in a light amount of oil over moderate heat, both sides, until they're golden and crispy.
