Boil the potatoes and mash them until smooth.

Sauté the onions and mushrooms, then pulse them in a food processor or blender.

Assemble in a baking dish: start with a layer of mashed potatoes, followed by the mushroom mixture, another layer of potatoes, a layer of sliced tomatoes, and finish with a top layer of potatoes.
