Method

Slice the potatoes thinly.

Place them in a bowl and toss with oil, garlic, thyme, rosemary, salt, and pepper.

Cut the bacon strips lengthwise in half.

Arrange two bacon strips slightly overlapping on a workspace to form a single line.

Place the potato slices along the bacon, also overlapping.

Carefully roll them up and place them into a greased muffin tin.

Repeat the process with the remaining potatoes and bacon.

Place in an oven preheated to 200°C (400°F).

Bake for 15-20 minutes.

Then cover with foil and leave in the oven for another 30 minutes.

Remove the foil and crisp up for another 5-10 minutes.
