Method
Clean the tenderloin of any silverskin and pat it completely dry with paper towels.
Mix all the marinade ingredients together and rub them all over the tenderloin.
Line a container with paper towels, place the tenderloin on top. Leave the lid ajar and refrigerate overnight.
Heat a heavy-bottomed pan over medium-high heat until really hot. Lightly oil the tenderloin and sear it on all sides until you get a nice golden-brown crust—about a minute per side.
Transfer the seared tenderloin to a 350°F oven for around 30 minutes. Cooking time depends on thickness, so use a meat thermometer and cook until the internal temperature reaches 160–165°F.
Remove the tenderloin from the oven, let it rest for at least 15 minutes, then slice.
