Pork Knuckle in a Roasting Bag

Method

Thaw the knuckle ahead of time so it reaches room temperature before cooking. Once thawed, rinse it, pat dry with paper towels, and score the skin. Season generously with salt and freshly ground black pepper on both sides.

In a bowl, combine all marinade ingredients and mix well. Set aside 3 tablespoons of the marinade for later — you'll need it at the end of roasting. Coat the entire surface of the knuckle with the remaining sauce.

Place the knuckle in a roasting bag, tie one end securely, pour the marinade into the bag with the knuckle, then tie the other end. Make a few slits in the top of the bag — careful not to puncture the bottom.

Roast in a preheated 180–190°C (350–375°F) oven for 3 hours.

After that time, remove the tray with the knuckle, open the bag by slicing the top, drizzle the reserved sauce (3 tablespoons) over it, return to the oven for another 20–30 minutes at 200°C (390°F). Once done, let it cool slightly, then slice.
