Method

Finely chop the onions and mushrooms, sauté until all the moisture has evaporated.

Stir in the herbs and grated suluguni cheese, mix well. Let cool.

Slice the pork into thin steaks (about 3/8 inch thick) and pound them out. Season with salt, pepper, and a sprinkle of paprika.

Place filling on one piece of meat, cover with another piece, and seal the edges.

Transfer to parchment paper and brush with melted butter.

Cook at 350°F for 18–20 minutes, then increase to 400°F for another 5–7 minutes.
