Method

Wash the citrus fruits and peel thin strips of zest, avoiding the bitter white pith.

Place the zest in a bowl of cold boiled water and let it soak.

Squeeze the juice from all the fruits and pour it into a saucepan. Add the chili pepper and place over the heat. Reduce until thickened.

Peel the ginger and garlic, and grate them on a fine grater.

Pour the soy sauce into a small bowl, and squeeze the ginger and garlic juice into it.

Pour in the reduced citrus juice and add the zest (discarding the water). Let sit for 5 minutes.

Strain the sauce into a gravy boat. Finely chop the cilantro and add it to the sauce.
