Get your potatoes on to boil for the mash. While they're cooking, slice your onions into thin rings.

Heat up a skillet, add some oil, and sauté the onions over medium heat until they're soft and golden. Keep stirring so they don't burn.

This is key—take the onions off the heat and set them aside in a bowl. In that same pan, add a knob of butter and pan-fry your thawed pollock fillets on both sides until they get a nice golden crust.

Once the potatoes are tender, mash them with hot milk, salt, and a bit of butter until you've got a nice fluffy purée. Serve alongside the fish and top with those caramelized onions.
