Plum and Tomato Sauce
A bright, sweet and sour sauce made from ripe plums and tomatoes with garlic and cilantro—perfect with meat, baked goods, and bread.

Method
Rinse the plums and tomatoes.
Halve the plums, remove the pits, and blend them until you get a chunky purée with small pieces still visible.
Cut the tomatoes into pieces and blend them the same way.
Mince the garlic with a knife, rinse the cilantro, pat it dry, and chop it fine.
Transfer the plum purée and tomatoes to a heavy pot, add the olive oil, and set it on the heat.
Bring to a boil, season with salt, reduce the heat, and simmer for 40 to 50 minutes.
Once the mixture has reduced, stir in the garlic and cilantro and remove from heat.
Let the sauce cool under a lid, then transfer it to jars and refrigerate.
If your plums were particularly tart, taste the sauce after it's reduced and adjust the flavor with a pinch of sugar if needed.
