Method
Wash and dry the sloe plums, then carefully remove the pits by slicing each berry around its circumference and popping the pit out with a knife.
Weigh the pulp and add an equal amount of sugar, mix well, and let sit at room temperature for a couple of hours, then refrigerate for 10–12 hours.
Once the plums have released their juices and the sugar has dissolved, transfer the mixture to an enameled saucepan, bring to a boil, and simmer for 5 minutes while skimming off the foam.
Let cool completely, then simmer again for 5 minutes.
Ladle the hot jam into sterile jars and seal them.
