Pitted Cherry Jam for the Winter
A thick, fragrant pitted cherry jam that is simply perfect with tea or for homemade baking.

Method
Remove stems and pits, then rinse the berries.
Place the cherries in a saucepan, cover with two-thirds of the sugar, and let sit for several hours until juices release.
Bring the mixture to a boil, simmer for 2–3 minutes, remove from heat, and let cool.
Repeat the cooking process 2 more times, allowing it to cool completely each time. Add the remaining sugar if needed.
Sterilize the jars (0.5L for 10 minutes, 1L for 15 minutes at 150°C) and pour boiling water over the lids.
Ladle the hot jam into the jars, seal tightly, turn upside down, and wrap in a blanket until completely cooled.
Store in a cool, dark place.
