Method
Rinse the cherries, pit them, and immediately toss with sugar to let the juices release.
Squeeze the oranges and zest them thinly if you like.
Add the juice, zest, cardamom, and cloves to the cherries. Bring to a boil and simmer for 30–40 minutes, skimming off any foam as it rises.
Once the syrup thickens and the berries begin to shrivel, stir in the citric acid and simmer for a few more minutes.
Pour the hot jam into a sterilized jar, seal it, and let it cool under a cloth.
Store in a cool place.
