Method
Prepare the wet ingredients: whisk together the egg, vinegar, and ice-cold sparkling mineral water, then set aside.
Sift the flour into a mixer bowl, add the salt and sugar, and mix to combine.
Add the cold, cubed butter and pulse until the pieces are the size of peas.
Pour in the wet mixture and mix just until the dough comes together into a ball.
Turn the dough out onto a work surface, shape it into a ball, and divide it into three portions.
Roll out three 30-cm circles.
Place the first piece of dough into the pie dish, add the filling, and cover with the second dough circle.
Decorate the pie with elements cut from the third dough circle and brush with an egg wash.
Bake at 200°C for 15-20 minutes, then lower the temperature to 175-180°C and bake for another 30-40 minutes.
