Method

Wash and dry the watermelon, then slice into rounds about 3/4 inch thick and cut into wedges small enough to fit through the jar opening.

Wash the jar with baking soda, rinse thoroughly, and sterilize using your preferred method. Boil the lid separately.

Pack the watermelon wedges into the jar.

Bring water to a boil and pour it over the watermelon to fill the jar. Cover with the lid and let it sit for 10 minutes to steam.

Pour the water back into the pot, add sugar and salt, and bring to a boil, stirring until completely dissolved.

Pour vinegar into the jar, add the aspirin tablet, and pour the hot brine over everything.

Seal the jar, flip it upside down, shake gently to dissolve the tablet, wrap it in a towel, and let it cool completely.

Store in a cool, dark place.
