Pickled Watermelon with Aspirin

Method

Wash and dry the watermelon, slice into rounds about 3/4 inch thick, then cut into wedges small enough to fit through the jar opening.

Wash the jar with baking soda, rinse thoroughly, and sterilize using your preferred method. Boil the lid.

Pack the watermelon wedges into the jar.

Bring water to a boil and pour over the watermelon to the top of the jar. Cover with the lid and let it sit for 10 minutes to steam.

Pour the water back into the pot, add sugar and salt, and bring to a boil, stirring until completely dissolved.

Pour vinegar into the jar, add the aspirin tablets, and cover with the hot brine.

Seal the jar, invert it, give it a gentle shake to dissolve the tablets, wrap it in a towel, and let cool completely.

Store in a cool, dark place.
