Method

Thoroughly wash and sterilize your jars and lids.

Place herbs, garlic, allspice berries, and cloves on the bottom of each jar.

Pack the tomatoes tightly into the jars. Go for small, firm plum or cherry varieties.

Cover the jars with boiling water, cap them, and let sit for 15 minutes.

Pour the water from all jars into one large pot. Measure the total volume of liquid.

Add salt, sugar, and citric acid to the pot based on the volume of water you have, then bring the brine to a boil.

Pour the hot brine over the tomatoes in the jars. Seal immediately with sterilized lids.

Flip the jars upside down, wrap them in a blanket or towels, and let cool completely.
