Method

Bring water to a boil with salt and sugar, then add vinegar.

Slice the onion into rings, cut the carrots into rounds, julienne the celery root, leave the herbs whole, and slice the garlic into cloves or thin slices.

In sterilized jars, layer the allspice berries and peppercorns, cloves, garlic, bay leaf, celery, carrots, and onion, then fill the jar with tomatoes.

Pour the hot brine over, cover with a lid, and sterilize the jars in a pot for 10 minutes after the water comes to a boil.

Seal tightly, invert the jars, and let them cool. Store at room temperature.
