Method
Cut the watermelon into wedges, remove visible seeds, and chop into bite-sized pieces while trimming off the sharp edges.
Place a sprig of thyme and clove at the bottom of a sterilized jar, then pack the watermelon pieces in tightly without crushing, filling in the gaps.
Pour boiling water over the top, cover with a lid, and let it steep for 3–5 minutes.
Drain the water into a saucepan, add the spices and honey, bring the brine to a boil, then stir in the citric acid until dissolved.
Pour the boiling brine over the watermelon in the jar until it overflows slightly, seal with a sterilized screw cap, and let cool completely under a warm cover.
