Method

Peel the melon and cut it into bite-sized pieces.

Place a clove of garlic at the bottom of each sterilized jar, then pack the melon in loosely without pressing down.

Pour boiling water over the melon and let it sit for fifteen minutes, then drain the water back into a saucepan.

Add salt, sugar, cinnamon, and cloves, bring to a boil until the crystals are completely dissolved, stir in the vinegar, and remove from heat.

Pour the boiling brine over the melon right up to the rim, seal with sterilized lids, and invert the jars to check for leaks.

After 24 hours, move them to a cool, dark place.
