Method
Wash the apples and place them in an enameled container.
Bring water with salt, sugar, and honey to a boil in a pot. Simmer for a few minutes and remove from heat.
Pour the hot marinade over the apples, adding currant and grape leaves.
Cover the apples with a plate, weigh them down with a heavy object, and leave at room temperature for 14 days to ferment.
After 2 weeks, pack the apples into sterilized jars, pour the strained brine over them, and seal with lids.
