Method

Mix flour with salt, add boiling water and vegetable oil, and stir with a spoon until combined. The boiling water cools quickly, so as soon as you've stirred it together, start kneading the dough with your hands.

Transfer the dough ball from the bowl onto your work surface and knead for another couple of minutes.

Wrap the finished dough in plastic wrap and let it rest for 30 minutes. After that, divide the dough into portions, dust with flour, and roll it out.

For the potato filling: sauté the onions until golden, add bacon and mix with boiled potatoes that you've mashed—season with salt.

For the mushroom filling: sauté the onions, add mushrooms, and season with salt and pepper.

Drop the varenyky into boiling salted water and cook for 2 minutes after the water returns to a boil.
