Method

Preheat your oven to 180°C (350°F) on convection setting.

Thaw the pastry sheet ahead of time.

Peel the pears, halve them, core them, and slice thinly. Squeeze lemon juice over the slices to keep them fresh.

Lay the pastry on parchment paper, dust lightly with flour, and roll it out thin.

Sprinkle the pastry with sliced almonds and crumbled almond cookies, then arrange the pear slices on top.

Chop the chocolate finely and scatter it over the pears.

Sprinkle everything with sugar, roll the pastry into a log along the long edge, and seal the ends without removing it from the parchment.
