Method

Peel the pears, halve them, and scoop out the cores.

Pour water into a pot, add sugar, vanilla, cinnamon, star anise, and zest, then bring to a boil.

Add the pears to the syrup and poach for 10–15 minutes over low heat. Transfer to paper towels to drain off excess moisture.

Finely chop the nuts and mix with honey and zest.

Roll out the dough in one direction and cut into rectangles.

Place a little filling in the center of each pear half, then position it cut-side down on the dough. You can brush the edges with some of the cooking syrup.

Bake in a 400°F (200°C) oven for 20–25 minutes. Dust with powdered sugar and garnish with fresh mint.
