Method

Dice the pear flesh into small pieces. Transfer to a saucepan, add the sugar, and toss everything together thoroughly.

Pour in the water and set over low heat. Simmer for about 1.5 hours, stirring frequently.

Pare the lemon zest and chop the flesh into pieces, making sure to remove the bitter white pith. Process both the flesh and zest in a blender until smooth.

Stir the lemon puree into the jam, bring it up to a boil, and immediately take it off the heat.

Ladle the hot jam into sterilized jars, seal tightly, and invert them. Wrap in a warm blanket, and once completely cooled, move to a cool place for storage.
